Sunrise Waldorf Salad with Super Greens Dressing
This healthy twist on a classic makes an excellent breakfast. I’ve also served this with chicken or tofu/tempeh in a wrap and as a sandwich. It’s super versatile and can be altered for breakfast, lunch, or as a side item at your next potluck.
Ingredients:
Blueberries
Grapes
Apples
Walnuts
Celery
Hemp Hearts/Hemp Seeds
Spinach
Vanilla Yogurt (For non-dairy, I recommend So Delicious brand)
Super Greens Powder
Agave or honey
Method:
Wash all fruit and cube apples, slice celery, and halve grapes. I also chop some of the larger walnut pieces, so that all of the ingredients are roughly the same size. This adds consistency to the bite, meaning that all bites have roughly the same flavor profile.
Prepare the dressing:
Combine yogurt, agave to taste (remember: you can always add more but you can’t take it away!), and a tablespoon or two of the super greens powder, I like the Amazing Greens brand available on Amazon and at Whole Foods, but any greens powder will do.
Add the dressing to the fruit and nut mixture in small increments, so as not to overdress the salad.
Serve over spinach and top with hemp hearts. Again, this is a yummy breakfast as it is, or you can add baked tofu or chicken to make a lunch of it.
